Often when we begin to talk about vegetables, terms like alkaline and acidic are more likely to surface. So how do this really work? Generally, the pH of the blood is important to the maintenance of health and healing. And, anyone who intend to naturally Heal with Foods – should ensure their overall activity is friendly to maintaining a healthy blood. The blood’s pH is regulated by internal systems that are continuously at work to monitor its narrow range of 7.35 to 7.45.

 

Below 7.35, the condition of the blood becomes acidic and is termed acidosis. Acidosis is categorized as severe when blood pH falls below 7.00 – many health problems and even death may result. On the other hand a pH above 7.45 – is termed alkalosis; if severe, may also lead to death.  They key in any case is to be temperate in all activities – “ Whether therefore ye eat, or drink, or whatsoever ye do, do all to the glory of God” (1 Corinthians 10:31).

 

Vegetables are similar in their outcomes in terms of their effect as are fruits; in that, the end result when “eaten correctly” is they regulate the pH of the blood making it alkaline. One difference between fruit and vegetables is the way in which they go about doing the same job. On this particular point, fruits clean and alkalinize the blood by binding to and eliminating acidic toxins through the urine. On the other hand, vegetables directly add alkaline minerals and nutrients. Hence, in a sense fruits can be more eliminative, while vegetables are more building. This article will not discuss fruits – we will do that in a later discussion. So, lets take a very general look at one of the ways in which vegetables do their work.

Generally speaking vegetables are most nourishing, some more than others.  Some root vegetables are found to have high caloric value and nourishing; they act as tonics or restorative.  Vegetable that have a tuber like yams, potatoes (Irish) and sweet potatoes are excellent building foods. Some root vegetables such as beets is potent medicines. They are both a blood tonic and detoxifier of the liver and the blood.

Other vegetables such as Celery and Parsley are nourishing and provides vitamin C; their roots are medicinal in other ways. In that, they are adaptogens – which supports the body under stressful conditions and enhances one’s overall vitality and improves energy levels. The roots of these herb-vegetables also play a role in kidney health.

Tubers such as cassava and vine vegetables such as Pumpkin and squash, are very beneficial help to regulate and lower blood sugar levels in those with diabetes. Further, pumpkin seeds are a good source of zinc which makes it useful as a vermifuge; in addition to providing good support to prostate health in men.

 

Many adults and children complain of not liking the taste of most vegetables. This is because some green leafy vegetables have a strong taste and some are bitter, such as, Mustard greens, Chaya, and Spanish needle. These are excellent blood builders, and they are very nutritious.  Bitter greens are often stimulants for bile flow which aids with digestion; and they are excellent for cleansing the liver. good for promoting the bile flow and cleansing the liver
